85 SHADES OF COFFEE
The coffee tasters’ job is a particularly complex one, but they now have an important reference to inspire them. The SCAA (Specialty Coffee Association of America) has decided to review all the possible aromas, flavours and aftertastes that may be found in a cup of coffee and collect them all in a new tasters’ wheel.
The update has been 20 years in the making and includes 85 items: from chocolate to honey, from chamomile to cherry, from grains to spices. Coffee can be described with reference to floral hints of rose, because it smells like malt, or, in unfortunate cases, because it recalls certain unpleasant flavours.
